Southwest Chicken Soup
I made this soup using leftovers from chicken tacos, which is so yummy.

Ingredients
- 2 tsps chili powderNutrition
- 2 tsps black pepperNutrition
- 2 tsps cayenne pepperNutrition
- 2 dashes saltNutrition
- 1 breast, bone and skin removed chicken breastNutrition
- 1 cup salsaNutrition
- 4 cloves garlicNutrition
- 42 oz chicken brothNutrition
- 14 oz waterNutrition
- 14 oz pinto beansNutrition
- 14 oz cornNutrition
- 3 oz fat free cheese, shreddedNutrition
Directions
- 1Add half of the liquid (water and broth), chicken, spices, and garlic to a pot. Simmer until the chicken is cooked all the way through.
- 2Remove chicken from broth and shred.
- 3Add the remainder of the liquid, shredded chicken, salsa, corn, and beans to the pot.
- 4Simmer for about 20 minutes to let flavors emerge.
- 5Serve with cheese sprinkled on top.
