I made this soup using leftovers from chicken tacos, which is so yummy.

Directions

  1. 1Add half of the liquid (water and broth), chicken, spices, and garlic to a pot. Simmer until the chicken is cooked all the way through.
  2. 2Remove chicken from broth and shred.
  3. 3Add the remainder of the liquid, shredded chicken, salsa, corn, and beans to the pot.
  4. 4Simmer for about 20 minutes to let flavors emerge.
  5. 5Serve with cheese sprinkled on top.
