Chicken Mole
Chicken with a very interesting sauce, including peanut butter, cocoa and chili powder.

Ingredients
- 2 tbsps chili powderNutrition
- 1/2 tsp cinnamonNutrition
- 1/2 tsp clovesNutrition
- 2 cloves garlicNutrition
- 1 large onionNutrition
- 2 1/2 lbs chicken breast tendersNutrition
- 2 large scallionsNutrition
- 1 large green bell pepperNutrition
- 2 tbsps peanut butterNutrition
- 2 tbsps cocoaNutrition
- 14 1/2 oz diced tomatoesNutrition
Directions
- 1Mince garlic, chop onion, chop scallions and core, seed and chop pepper.
- 2Sprinkle chicken with pepper and salt.
- 3Heat a large non-stick skillet coated with olive oil cooking spray over medium-high heat. Add chicken and cook for 8 minutes, turning once or until browned on both sides. Remove chicken to a large plate.
- 4Add the onion, bell pepper, and garlic to the skillet and cook for three minutes or until onion is translucent. Stir in chili powder, cinnamon and cloves and cook for one minute.
- 5Return the chicken to the skillet. Add tomatoes (with juice), peanut butter and cocoa powder and bring to a boil.
- 6Cover and simmer, stirring every few minutes, for 25 minutes, turning once, or until the chicken is no longer pink.
- 7Garnish with scallions.
