Zucchini Oat Chocolate Chip Cookies

  1. 1In mixing bowl, whisk together flour, cinnamon, baking soda and salt for 20 seconds. Set aside.
  2. 2Whip together butter, sugar and brown sugar until creamy. Mix in egg and vanilla. Add zucchini. Slowly add flour mixture.
  3. 3Stir in oats, walnuts and chocolate chips (reserve 1/3 cup chocolate chips to press into top of dough balls before baking).
  4. 4Shape into balls about 2 tablespoons and put on cookie sheet 2" apart. Use parchment paper if desired.
  5. 5Bake 11-14 minutes until edges are lightly golden.
  6. 6Cool on cookie sheet 2 minutes then transfer to wire rack to cool.
