Directions
- 1Cook and cool brown rice per package directions. Drain and rinse black beans.
- 2Dice onion, mango and jalapeño. Slice cherry tomatoes. Chop cilantro.
- 3Mix together and dress with vinegar. Salt and pepper to taste.
- 4Chill and serve as a delicious side dish, or a vegetarian main dish.
