Directions

  1. 1Cook and cool brown rice per package directions. Drain and rinse black beans.
  2. 2Dice onion, mango and jalapeño. Slice cherry tomatoes. Chop cilantro.
  3. 3Mix together and dress with vinegar. Salt and pepper to taste.
  4. 4Chill and serve as a delicious side dish, or a vegetarian main dish.
