  1. 1Pour two cups apple juice into a large bowl.
  2. 2Squeeze canned tomatoes until almost dry; add to bowl.
  3. 3Add wine (optional).
  4. 4Add tilapia.
  5. 5Salt and pepper to taste.
  6. 6Allow to marinate.
  7. 7Bake in oven on 375 °F (190 °C) or grill until fish is white and flaky.
