- 1Pre-heat oven to 410 °F (210 °C).
- 2Prepare pie crust (pre-bake if necessary).
- 3Slice tomatoes thinly, as well as cheese. Wash and chop thyme.
- 4Place tomatoes, cheese, and thyme on crust, drizzle with olive oil. Season with salt and pepper to taste.
- 5Bake for 30 minutes. Cool slightly and serve.
