- 1Heat vegetable oil in a medium sized pot, meanwhile blend onion, tomato, and pepper in blender and set aside.
- 2When oil is hot, pour in tomato mixture and immediately reduce heat.
- 3Allow to cook for a few minutes, until sizzling has stopped.
- 4Add broth, pepper, tomato paste and enough salt to taste.
- 5Other seasonings may be added if desired, as well as fried chicken or beef.
- 6Continue to simmer on low-medium heat for about 20 more minutes.
