Spicy Tomato Pepper Stew

  1. 1Heat vegetable oil in a medium sized pot, meanwhile blend onion, tomato, and pepper in blender and set aside.
  2. 2When oil is hot, pour in tomato mixture and immediately reduce heat.
  3. 3Allow to cook for a few minutes, until sizzling has stopped.
  4. 4Add broth, pepper, tomato paste and enough salt to taste.
  5. 5Other seasonings may be added if desired, as well as fried chicken or beef.
  6. 6Continue to simmer on low-medium heat for about 20 more minutes.
