Ingredients
- 1 tbsp sweetenerNutrition
- 1 tbsp cornstarchNutrition
- 2 tbsps sliced green onionsNutrition
- 2 tbsps lite soy sauceNutrition
- 1 tbsp distilled white vinegarNutrition
- 1 tbsp extra virgin olive oilNutrition
- 16 oz boneless skinless chicken breastNutrition
- 1/4 tsp ground red cayenne pepperNutrition
- 1/4 cup chicken brothNutrition
- 1 clove garlicNutrition
- 1 tsp grated ginger rootNutrition
- 1 medium red bell pepper, cut into piecesNutrition
Directions
- 1In a medium size bowl, combine the soy sauce, vinegar, cornstarch, sweetener (like Splenda) and red pepper. Set aside.
- 2Heat a large skillet over high heat. Add the olive oil and rotate the skillet until completely covered.
- 3Add the chicken, garlic and ginger root.
- 4Continue cooking for 6 minutes or until chicken is cooked throughout.
- 5Add the bell pepper pieces and continue cooking for an additional minute.
- 6Pour the broth mixture to the skillet. Cook and stir for 1 minute or until the sauce has thickened.
- 7Sprinkle evenly with green onions.
