Ingredients

Directions

  1. 1Sauté spinach and onions in olive oil until wilted. Place in bottom of a casserole.
  2. 2Cube tomatoes, prosciutto, and add to the casserole in layers.
  3. 3Mix eggs, sour cream and spices to form a custard. Pour over the casserole and spread evenly. Use a spoon handle to help the custard penetrate the layers but avoid stirring.
  4. 4Grate cheese and sprinkle on top or spread slices evenly.
  5. 5Bake at 350 °F (175 °C) for 30-45 minutes or until a toothpick inserted pulls out clean.
  6. 6Let cool before slicing.
