Sweet & Spicy Chicken with Cashews

Ingredients
- 1/4 tsp kosher saltNutrition
- 2 tsps minced garlicNutrition
- 1 tbsp canola oilNutrition
- 2 tbsps sambal oelekNutrition
- 2 tbsps light agave nectarNutrition
- 1/4 cup all-purpose flourNutrition
- 1 lb chicken tendersNutrition
- 1/4 cup soy sauceNutrition
- 1/2 cup roasted unsalted cashew nutsNutrition
- 1/4 tsp black pepperNutrition
- 2 tsps grated fresh gingerNutrition
- 1/2 cup scallions, choppedNutrition
- 2 tbsps honeyNutrition
- 3 tsps unpacked brown sugarNutrition
Directions
- 1In a small bowl, mix together the soy sauce, sambal oelek, agave nectar, garlic, ginger, honey and sugar. Set aside.
- 2Slice the chicken tenders into 1" segments.
- 3In another bowl, mix together the flour, salt and pepper.
- 4Lightly dredge the chicken in the flour mixture.
- 5Heat the canola oil in a wok or large frying pan. Sauté the chicken in hot oil until it is no longer pink.
- 6Pour the sauce over the chicken and simmer, stirring often, until the sauce is thick and bubbly.
- 7Stir in the cashews. Sprinkle the top with sliced scallions.
