Spinach, Bacon & Onion Crustless Pan Quiche

  1. 1Over medium heat, melt butter and add chopped onion and garlic. Cook until onions are slightly caramelized.
  2. 2In another pan, or in the oven, cook bacon until crispy. Once bacon is cooked and cooled, give them a rough chop.
  3. 3Once onions are caramelized, add spinach to the pan. Cook until slightly wilted then add chopped bacon to the pan. Add shredded cheese and stir to combine.
  4. 4In a small bowl, whisk together eggs, heavy cream and salt and pepper to taste.
  5. 5Keep heat on medium and spread spinach mixture around the pan evenly.
  6. 6Pour egg and cream mixture over spinach and tilt pan to evenly distribute over the spinach. Do not stir.
  7. 7Cook until firm and no longer sticking to the edges of the pan. Carefully flip your quiche onto a plate and return to the pan to cook on the other side.
  8. 8Once no longer runny and firm, transfer to a plate and serve. Enjoy.
