Italian Vegetable Soup

Ingredients
- 1 tsp ground basilNutrition
- 1 tsp ground oreganoNutrition
- 1 tsp ground thymeNutrition
- 2 tbsps olive oilNutrition
- 2 cups shredded cabbageNutrition
- 64 oz chicken brothNutrition
- 1 cup chopped carrotsNutrition
- 1 cup chopped celeryNutrition
- 5 cloves garlic, mincedNutrition
- 1 cup chopped onionsNutrition
- 3 medium whole tomatoes, choppedNutrition
- 1 cup brown riceNutrition
- 16 oz black beans, rinsed and drainedNutrition
- 16 oz white beans, rinsed and drainedNutrition
Directions
- 1Heat oil in large pot over medium-high heat.
- 2Add onions, carrots and celery. Cook 5-7 minutes, stirring occasionally. Add garlic and cook for 1 minute.
- 3Add tomatoes, broth, oregano, basil and thyme and bring to a boil. Add cabbage and rice and reduce heat to a simmer.
- 4Cook 30-40 minutes or until rice is tender. Stir in beans and simmer for 5 minutes or until beans are heated through.
