- 1Spray large non-stick frying pan with non-stick cooking spray.
- 2Over medium heat, add olive oil to pan and once warm, add chopped onion, green pepper, mushrooms and broccoli. Stir occasionally and cook until onions are translucent.
- 3Add curry powder to the cooking vegetables. Then stir in water to allow the curry to permeate the rice once added.
- 4Stir in rice, ensuring that curry is evenly distributed.
- 5Stir in raisins and slivered almonds.
- 6Heat until all ingredients are warmed through.
