- 1Cook bacon, remove bacon from pan and let cool. Chop when cool. Reserve grease.
- 2Cook sliced mushrooms in bacon grease until soft.
- 3Remove mushrooms from heat, add Dijon mustard, vinegar, Splenda and oil.
- 4Toss bacon, spinach, onion with mushroom mixture.
