  1. 1Cook bacon, remove bacon from pan and let cool. Chop when cool. Reserve grease.
  2. 2Cook sliced mushrooms in bacon grease until soft.
  3. 3Remove mushrooms from heat, add Dijon mustard, vinegar, Splenda and oil.
  4. 4Toss bacon, spinach, onion with mushroom mixture.
