Ingredients
- 1/2 tbsp saltNutrition
- 2 tbsps corn oilNutrition
- 2 large eggsNutrition
- 1 cup skim milkNutrition
- 1/2 tsp allspiceNutrition
- 1 tsp cinnamonNutrition
- 1 tsp nutmegNutrition
- 1/4 cup grated carrotNutrition
- 1/2 cup chopped pecansNutrition
- 2 tsps baking powderNutrition
- 1/4 cup packed brown sugarNutrition
- 2 cups oat branNutrition
- 1 cup quartered or chopped appleNutrition
- 1/4 cup honeyNutrition
Directions
- 1Preheat oven to 350 °F (175 °C) Spray bottom of muffin tins with non-stick cooking spray.
- 2Combine oat bran, brown sugar, baking powder, salt, cinnamon, nutmeg and allspice in one bowl.
- 3Mix together milk, egg and honey; add milk and egg mixture to oat bran mixture and stir until moistened.
- 4Add grated apple, carrot and pecans.
- 5Fill muffin cups 1/2 to 2/3 full.
- 6Bake at 350 °F for 15 to 17 minutes. Tops will brown only slightly.
