  1. 1Preheat oven to 350 °F (175 °C) Spray bottom of muffin tins with non-stick cooking spray.
  2. 2Combine oat bran, brown sugar, baking powder, salt, cinnamon, nutmeg and allspice in one bowl.
  3. 3Mix together milk, egg and honey; add milk and egg mixture to oat bran mixture and stir until moistened.
  4. 4Add grated apple, carrot and pecans.
  5. 5Fill muffin cups 1/2 to 2/3 full.
  6. 6Bake at 350 °F for 15 to 17 minutes. Tops will brown only slightly.
