Ingredients
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 1 can condensed tomato soupNutrition
- 4 cups reduced sodium chicken brothNutrition
- 1 tbsp chilli sauce or pasteNutrition
- 1 large onion, finely choppedNutrition
- 1 cup crushed tomatoesNutrition
- 1/2 cup coconut milkNutrition
- 1/2 cup red lentilsNutrition
Directions
- 1In a pot, heat oil and cook onions until glassy.
- 2Add lentils and mix well.
- 3Add tomatoes, tomato soup and stock and bring to the boil.
- 4Reduce heat, cover and simmer for 45 minutes or until lentils have broken down.
- 5Add coconut milk and chili sauce.
- 6Reheat and season with salt and pepper.
