Ingredients
- 2 tbsps olive oilNutrition
- 1 packet onion soupNutrition
- 43 1/2 fl oz chicken brothNutrition
- 1/2 head medium cabbage, shreddedNutrition
- 2 large carrots, choppedNutrition
- 2 stalks large celery, choppedNutrition
- 2 cloves garlicNutrition
- 1 large onion, choppedNutrition
- 1 medium potato, choppedNutrition
- 2 cups sliced yellow squashNutrition
- 1 large zucchini, choppedNutrition
- 3 cans diced tomatoesNutrition
- 2 cups waterNutrition
- 8 oz mushrooms, choppedNutrition
Directions
- 1Heat the olive oil in a large stock pot over medium heat.
- 2Add the carrots, celery, and onion until tender. Add the garlic and sauté until fragrant.
- 3Add the chicken stock (low fat if available) and tomatoes. Bring to a boil.
- 4Add the potato, zucchini, yellow squash, mushrooms, and cabbage.
- 5Reduce heat, simmer, and serve!
