Ingredients
- 1 tsp taco seasoningNutrition
- 2 packets onion soup mixNutrition
- 1 cup broccoliNutrition
- 1 head large cabbage, choppedNutrition
- 5 oz frozen cauliflowerNutrition
- 5 oz frozen carrotsNutrition
- 5 oz frozen onionsNutrition
- 5 oz frozen spinachNutrition
- 2 cups tomatoes, with juiceNutrition
- 1/2 cup slices waterchestnutsNutrition
- 2 cups waterNutrition
- 5 oz frozen green peppersNutrition
Directions
- 1Put water and all the vegetables in large pot.
- 2Bring to hard boil and add onion soup mix and packet of taco seasoning mix.
- 3Lower heat and cover.
- 4Simmer until vegetables are tender.
- 5Note: this soup can be enjoyed as a meal replacement or a healthy in-between meal snack.
