Directions

  1. 1Boil pasta and drain, reserving 1 cup of the cooking water.
  2. 2Cook chopped bacon in a large pot until just starting to crisp.
  3. 3Remove to plate lined with paper towel. Drain all but 2 tablespoons of bacon grease from pan.
  4. 4Add onion and sauté until tender.
  5. 5Add Swiss chard and spinach and season with salt and pepper.
  6. 6Add reserved pasta water and cook until chard is tender, about 4 minutes. Add vinegar.
  7. 7Add pasta and olive oil into the pot and toss to coat.
  8. 8Sprinkle with bacon and parmesan cheese.
