Bacon & Swiss Chard Pasta

Directions
- 1Boil pasta and drain, reserving 1 cup of the cooking water.
- 2Cook chopped bacon in a large pot until just starting to crisp.
- 3Remove to plate lined with paper towel. Drain all but 2 tablespoons of bacon grease from pan.
- 4Add onion and sauté until tender.
- 5Add Swiss chard and spinach and season with salt and pepper.
- 6Add reserved pasta water and cook until chard is tender, about 4 minutes. Add vinegar.
- 7Add pasta and olive oil into the pot and toss to coat.
- 8Sprinkle with bacon and parmesan cheese.
