Directions
- 1Heat skillet with non-stick spray, beat eggs and pepper to taste.
- 2When pan is hot, cook eggs and put spinach on top of eggs. Place cover on top for fluffyness.
- 3When underside is done, flip. Cook until cooked through and the spinach is soft.
- 4Plate eggs, and sprinkle feta (low fat if possible) on top.
- 5Optional, have 100 calorie English muffin for an extra point - make an egg sandwich out of it.
