  1. 1Heat skillet with non-stick spray, beat eggs and pepper to taste.
  2. 2When pan is hot, cook eggs and put spinach on top of eggs. Place cover on top for fluffyness.
  3. 3When underside is done, flip. Cook until cooked through and the spinach is soft.
  4. 4Plate eggs, and sprinkle feta (low fat if possible) on top.
  5. 5Optional, have 100 calorie English muffin for an extra point - make an egg sandwich out of it.
