Chinese Beef and Pepper Salad

Ingredients
- 1 tsp gingerNutrition
- 2 tbsps extra virgin olive oilNutrition
- 1 clove garlic, mincedNutrition
- 2 small scallions, slicedNutrition
- 1 medium red bell pepper, cut into sliversNutrition
- 1 lb london broil, cut into sliversNutrition
- 1/3 cup soy sauce, lightNutrition
- 2 servings 1 packet sugar substituteNutrition
- 1/3 oz dry sherry (1 tbsp)Nutrition
Directions
- 1In small bowl, whisk together soy sauce, oil, sherry, sugar substitute like Splenda, ginger and garlic.
- 2Add beef and toss to coat.
- 3Cover and refrigerate for up to 1 day until ready to use.
- 4Drain beef and reserve marinade.
- 5Place beef on plate and toss with pepper and scallions.
- 6Serve with reserved marinade on side.
