Creamy Cauliflower Soup
An easy to make, comforting soup with not a lot of calories or added fats.

Ingredients
- 2 tbsps butterNutrition
- 1 tsp leaves basilNutrition
- 1/2 tsp curry powderNutrition
- 1 tsp marjoramNutrition
- 0.12 tsp black pepperNutrition
- 1/2 tsp leaves thymeNutrition
- 1/2 tsp sea saltNutrition
- 1 tbsp olive oilNutrition
- 2 heads medium cauliflowerNutrition
- 2 stalks large celeryNutrition
- 3 cloves garlicNutrition
- 1 medium onionNutrition
- 8 large scallionsNutrition
- 6 cups waterNutrition
- 1 oz white misoNutrition
Directions
- 1Chop scallions and onion. Mince garlic. In heavy soup kettle, melt butter. Add oil. Add onion, scallions and garlic.
- 2Chop celery and cauliflower, add to pot. Add seasonings. Mix well and cook, uncovered, over medium heat for several minutes, stirring frequently.
- 3Add water and miso (1 oz = 2 tablespoons).
- 4Bring to boil. Simmer, covered, over medium heat for 15 minutes or until cauliflower is tender.
- 5Remove cover and cool slightly. Puree in small increments in blender until smooth and creamy.
- 6Reheat if necessary, adding a dash of fresh ground nutmeg, if desired.
