Chicken Noodle-Less Soup

Ingredients
- 1/2 tsp pepperNutrition
- 1/2 tsp saltNutrition
- 1 cup strips or slices carrotsNutrition
- 1 cup chopped celeryNutrition
- 8 oz chicken tendersNutrition
- 29 oz chicken broth, low-sodiumNutrition
- 1 cup pieces or slices mushroomsNutrition
- 1/2 cup chopped onionsNutrition
- 1/4 cup fresh parsley, choppedNutrition
- 1 cup chopped zucchiniNutrition
- 1 cup waterNutrition
Directions
- 1In stockpot, bring chicken broth and water to a boil. Cook chicken for about 5 minutes or until done. Remove chicken to cutting board and let it cool.
- 2Add onion, carrots and celery. Boil for about 10 minutes or until vegetables are tender.
- 3Add zucchini and mushrooms and cook for an additional 5-10 minutes.
- 4Shred chicken with two forks and add to stockpot.
- 5Add salt, pepper, and parsley.
- 6Enjoy!
