Sausage and Shrimp Gumbo

Ingredients
- 2 tsps cajun seasoningNutrition
- 14 g andouille smoked sausageNutrition
- 1 medium red bell pepperNutrition
- 15 medium raw peeled and deveined shrimpNutrition
- 1/4 cup all purpose flourNutrition
- 1/4 cup olive oilNutrition
- 1 large green bell pepperNutrition
- 2 cups chicken broth, bouillon or consommeNutrition
- 1 cup chopped mature onionsNutrition
- 1 cup chopped celeryNutrition
- 2 cloves garlicNutrition
- 3 cups white rice (long-grain, cooked)Nutrition
- 8 oz okra (frozen)Nutrition
Directions
- 1Slice sausage into 1/2 inch slices.
- 2Chop peppers, onion, garlic, and celery.
- 3Combine flour and oil in large saucepan until smooth over medium high heat for 3 minutes. Reduce heat to medium and stir for 6-8 minutes or until roux is a dark reddish brown.
- 4Add vegetables. Cook for 8-10 minutes or until tender. Add cajun seasoning.
- 5Pour chicken broth and bring to a boil. Stir for 1 minute. Reduce heat to low.
- 6Add sausage, salt, and pepper. Cover and simmer for 15 minutes.
- 7Remove cover and bring to a boil. Add shrimp and cook for 3 minutes or until it turns pink.
- 8Ladle gumbo into bowls over rice.
