  1. 1Preheat oven to 350 °F (175 °C).
  2. 2Spray muffin pan with non-stick spray or line with cupcake liners.
  3. 3Mix oatmeal, salt, baking powder, cinnamon.
  4. 4Add remaining ingredients until it resembles slightly runny oatmeal.
  5. 5Fill muffin cups 3/4 full.
  6. 6Bake 15-20 minutes until golden brown.
  7. 7Note: this is a modification of SourSugarBaby07's Oatmeal Muffins recipe; I added a mashed banana to the recipe and it increased the flavor even more!
