Directions

  1. 1To prepare quinoa, rinse dry quinoa very well under running water in a fine mesh colander. Put in a saucepan with 2 cups of water.
  2. 2Cook according to package directions (10-15 minutes) until all water is absorbed. Let cool.
  3. 3Add remaining ingredients & chill at least 1/2 hour.
  4. 4Serve with additional lemon wedges if desired.
