Quinoa Salad
A gluten free healthy quinoa salad served Greek style with fresh veggies and balsamic vinegar.

- 1Cook quinoa. Soak and rinse off quinoa, transfer drained quinoa to the cooking pot, add 1 1/2 cups water and 1/4 tsp salt if desired. Bring to a boil, cover with a tight fitting lid, and turn the heat down to simmer. Cook quinoa for 12 minutes. Remove quinoa from heat and allow to sit 5 minutes with the lid on.
- 2Chop veggies while quinoa is cooking. Add veggies to cooled down quinoa.
- 3Drizzle olive oil and vinegar to taste over salad.
- 4Serve chilled for best results.
- 5Note: add feta if desired. Add veggies as much or as little as you prefer e.g. you may add red or green onions.
