Ingredients
- 1 tbsp olive oilNutrition
- 3 cups spinachNutrition
- 55 Kalamata olivesNutrition
- 8 oz fat free fetaNutrition
- 1/2 cup greek vinaigrette dressingNutrition
- 20 grape tomatoesNutrition
- 1 package cubed tofuNutrition
- 1 tbsp black pepperNutrition
- 2 cloves garlicNutrition
- 1 cup chopped red onionNutrition
- 1 cup quinoaNutrition
Directions
- 1Add 1 cup of dry quinoa with 2 cups of water in a sauce pan.
- 2Bring to a boil, and reduce to a simmer for 15 minutes.
- 3While quinoa is cooking, finely chop garlic.
- 4Add garlic and olive oil and black pepper with grape tomatoes in a small bowl.
- 5Add to baking sheet and broil for 10 minutes until tomatoes cook down.
