Directions
- 1Heat olive oil in skillet.
- 2Add onions, peppers and garlic.
- 3When vegetables are soft add one cup water and can of tomato paste.
- 4Add chili powder and cumin.
- 5Stir in the cooked rice and drained and rinsed kidney beans.
- 6Simmer 5 to 10 minutes.
