Directions
- 1Add oil to a pan and heat on low.
- 2Dice onion add it and garlic to pan saute 5 min.
- 3Dice and add mushroom cook for another 5 min then dice and add potato cook until just below fully cooked.
- 4Beat 6 eggs and 3 tbsp of milk of choice till all one color.
- 5Add eggs to vegetables mixture cook to done.
- 6Top with green onions and serve.
