Homemade salted and fried potato chips make for a great snack.

- 1Wash then slice the potatoes very thinly. As you slice, drop them into deep, cold water. A mandolin does the best job of this and the slices should be only slightly thicker than regular potato chips.
- 2Bring a deep pan of frying oil to 375 °F (190 °C).
- 3Dry the potatoes thoroughly, then fry for a couple minutes until crisp and golden.
- 4Drain on paper towels and then season generously with salt.
- 5Note: you will need to use a fryer or a pan with enough oil to completely cover each potato slice.
