  1. 1In one bowl stir together rolled oats, brown sugar, salt, and cinnamon.
  2. 2In a separate bowl mix honey, canola oil and vanilla.
  3. 3Dump honey mixture over granola mixture, thoroughly combine by hand. Ensure that everything is evenly coated by honey.
  4. 4Heat oven to 300 °F (150 °C).
  5. 5Spread mixture in a thin, even layer on a baking sheet and place on center rack.
  6. 6Bake for 20 to 30 minutes, stirring every 10 minutes.
  7. 7Cool completely, stirring occasionally to prevent clumping or group together for clusters. Stir any extras such as dried fruit, nuts, seeds, toasted coconut, etc. at this point.
  8. 8Store in an airtight container. Goes stale fast!
