Directions

  1. 1Ground 1 cup of flax seeds.
  2. 2In bowl #1: add ground flax, baking soda and baking powder. Mix well.
  3. 3In bowl #2: add eggs, water, oil, sweetener (lik Stevia or Splenda) and vanilla. Mix well.
  4. 4Add walnuts to dry ingredients.
  5. 5Grease a microwave casserole dish - 8" diameter.
  6. 6Mix both dry and wet ingredients together. Pour into greased microwave casserole dish.
  7. 7Microwave on high for 5 minutes.
  8. 8Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries).
