Oriental Broad Beans

Ingredients
- juice of 1/2 lemonNutrition
- 1 medium tomato, choppedNutrition
- 1/4 tsp dried corianderNutrition
- 1/4 tsp cuminNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 clove garlic, choppedNutrition
- 2 tbsps parsleyNutrition
- 2 tbsps shallots, choppedNutrition
- 1 thin chili pepper, choppedNutrition
- 1 cup broad beansNutrition
Directions
- 1In a pan over medium heat add the tomato, shallots, chili pepper and garlic (add a little water if needed).
- 2Add the beans and stir together. Cook for 10 minutes.
- 3Remove pan from heat and place in a serving dish.
- 4Add the lemon juice, parsley, cumin, coriander, salt and pepper. Stir well.
- 5Note: an egg can be added to the top of the beans or serve with a boiled egg on the side.
