Ingredients
- 1/2 tsp oriental dried chili powderNutrition
- 1/2 tsp garlic powderNutrition
- 5 oz pork luncheon meatNutrition
- 1 lime zestNutrition
- 1/4 cup lime juiceNutrition
- 1/4 cup cilantro leaves, choppedNutrition
- 2 sprigs cilantroNutrition
- 1/4 cup slices ginger root, finely choppedNutrition
- 1 small red onion, finely choppedNutrition
- 8 cherries tomatoesNutrition
- 4 small thai bird peppersNutrition
Directions
- 1Combine all ingredients (except cilantro, cherry tomatoes and cilantro) in a sealed glass or plastic container to marinate.
- 2Refrigerate at least two hours or preferably overnight
- 3Stir or shake occasionally to evenly coat.
- 4One hour before serving, stir in cilantro.
- 5Serve on a bed of torn lettuce of your choice.
- 6Garnish with quartered cherry tomatoes, Thai bird peppers and cilantro sprigs.
