  1. 1Preheat oven to 500 °F (260 °C). Line a rimmed baking sheet with foil and lightly coat with nonstick cooking spray. Set aside.
  2. 2In a bowl combine eggs, milk, vanilla and cinnamon. Beat with a wire whisk or rotary beater until well mixed. Set aside.
  3. 3Using a serrated knife, cut horizontally a pocket in each slice of bread. From the front to almost the bottom crust. Fill with banana slices.
  4. 4Dip bread slices into egg mixture, coating both sides of each slice. Place on the prepared rimmed baking sheet.
  5. 5Bake for 10-12 minutes or until golden brown. Turn once during the baking time.
  6. 6Sprinkle with powdered sugar and serve.
  7. 7Note: also delicious served with syrup.
