Banana Bread

Ingredients
- 2 large eggsNutrition
- 1 1/4 tbsps butterNutrition
- 1/2 tsp saltNutrition
- 1 tsp vanilla extractNutrition
- 3 small bananasNutrition
- 1/2 cup packed raisinsNutrition
- 1/2 cup pieces or chips walnutsNutrition
- 2 1/2 tsps baking powderNutrition
- 1/2 tsp baking sodaNutrition
- 1/2 cup sugarNutrition
- 1 1/2 cups flourNutrition
Directions
- 1Pour hot tea over raisins and allow to soak while you prepare the rest of the ingredients.
- 2Pre-heat oven to 340 °F (170 °C).
- 3Sift flour, baking powder, baking soda and salt into a bowl. Melt the butter and combine it with the sugar in another bowl, then add the eggs one at a time.
- 4Mash the bananas and add these to the wet ingredients too.
- 5Stir in the walnuts, drained raisins and vanilla extract.
- 6Finally stir in the flour mixture a third at a time.
- 7Scrape into a loaf tin (buttered and floured) and bake for 1 hour until a skewer comes out clean.
