Spinach and Feta Pasta with Shrimp

Ingredients
- 1/2 tsp crushed red pepperNutrition
- 2 cups cooked shrimpNutrition
- 1 3/4 cups diced tomatoesNutrition
- 12 oz tri-color rotini pastaNutrition
- 2 cups reduced fat feta cheeseNutrition
- 1 tsp pepperNutrition
- 2 tbsps olive oilNutrition
- 1 clove garlicNutrition
- 1 cup mushrooms, slicedNutrition
- 1/2 cup onion, choppedNutrition
- 3 cups spinachNutrition
Directions
- 1Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.
- 2Heat olive oil in a large skillet over medium-high heat. Add onion, garlic and mushrooms, cook until soft.
- 3Drain juice from tomatoes and add them to the skillet along with the shrimp, spinach, pepper and crushed red pepper. Cook until spinach is wilted and any juices are mostly gone, about 5 minutes.
- 4Reduce heat to medium, stir in pasta and feta and cook until cheese is melted.
- 5Note: shrimp can be substituted with chicken or omitted for a vegetarian meal.
