Pork with Green Peppercorns

Ingredients
- 5 oz greek yogurt, lowfatNutrition
- 1 dash black pepperNutrition
- 1 tbsp green peppercorns in brine, drainedNutrition
- 16 oz lean pork fillet, cut in thin stripsNutrition
- 1 clove garlic, crushedNutrition
- 8 oz mushrooms, slicedNutrition
- 1 medium onion, thinly slicedNutrition
- 12 oz brown riceNutrition
- 1 oz flourNutrition
- 2 oz vegetable fat spreadNutrition
Directions
- 1Cook the rice according to packet directions and keep hot. Season the flour with salt and pepper, add the pork and toss until coated.
- 2Meanwhile, melt the spread in a saucepan, add the onion and garlic and cook for about 5 minutes, stirring occasionally, until soft but not brown.
- 3Add the pork and cook for about 5 minutes, stirring occasionally.
- 4Add the mushrooms and peppercorns and continue cooking for about 5 minutes, stirring occasionally, until the pork is tender.
- 5Stir in the yogurt and heat through gently before serving with the rice.
- 6Serve with your choice of green vegetables.
