  1. 1Marinate ribs, fish sauce, red pepper, chilli, 2 tsp of the sugar and half the spring onion in a clay pot or casserole dish.
  2. 2Combine remaining sugar and oil in a small pan and cook over medium heat for 3 minutes until golden.
  3. 3Pour over ribs and cook covered over medium heat for 25-30 minutes until sauce is reduced by half.
