Vegan Quiche
A healthy no dairy vegan quiche with vegetables and tofu.

Ingredients
- 1 tbsp olive oilNutrition
- 4 tbsps nutritional yeastNutrition
- 7.5 oz firm tofuNutrition
- 1/2 cup cashews, rawNutrition
- 1 9" organic whole wheat pie shellNutrition
- 1/4 tbsp paprikaNutrition
- 1/2 tsp saffronNutrition
- 1 fl oz lemon juiceNutrition
- 2 cloves garlicNutrition
- 1 cup mushrooms, slicedNutrition
- 1 small onion, choppedNutrition
- 2 fl oz soy milkNutrition
- 1 bunch spinachNutrition
Directions
- 1Preheat oven to 350 °F (175 °C).
- 2Heat olive oil over medium heat and saute onions until translucent.
- 3Add mushrooms and garlic and cook until mushrooms have given up some liquid.
- 4Add spinach and continue cooking until spinach is wilted to nearly done. Remove from heat. Season with salt, pepper and paprika.
- 5In a food processor, grind the cashews until fine.
- 6Add tofu, nutritional yeast, soy milk, tumeric and lemon juice. Blend until the consistency is creamy, adding more soy milk if needed.
- 7Combine the cashew tofu mixture with the spinach mushroom mixture and pour into pie shell.
- 8Bake for 30 minutes or until mixture is set and crust is done.
