- 1Spray skillet with cooking spray. Saute mushrooms, green onions and tomatoes for 3 minutes or until it starts to produce liquid.
- 2Add the turkey sausage and spinach and cook until spinach starts to wilt.
- 3Add shredded cheese.
- 4Pour egg whites over the mixture in the skillet and cover for approximately 5-8 minutes or until eggs set to desired texture.
