  1. 1Spray skillet with cooking spray. Saute mushrooms, green onions and tomatoes for 3 minutes or until it starts to produce liquid.
  2. 2Add the turkey sausage and spinach and cook until spinach starts to wilt.
  3. 3Add shredded cheese.
  4. 4Pour egg whites over the mixture in the skillet and cover for approximately 5-8 minutes or until eggs set to desired texture.
