Pork and Apple Braise
A delicious, low fat medley of pork loin and green apples.

Ingredients
- 1 tbsp vegetable oilNutrition
- 2 tbsp brandyNutrition
- 4 pork loin steaksNutrition
- 1/2 cup light pouring whipping creamNutrition
- 2 tbsp mustard seed powderNutrition
- 2/3 cup pitted prunesNutrition
- 1 cup chicken stockNutrition
- 2 medium green apples, cut into wedgesNutrition
- 1 clove garlic, choppedNutrition
- 1 large onion, thinly slicedNutrition
- 2 tsps soft brown sugarNutrition
Directions
- 1Heat the oil in a large heavy-based saucepan.
- 2Cook the onion and garlic for 10 minutes over low heat, stirring often, until softened and golden brown.
- 3Add the sugar and apple and cook, stirring regularly, until the apple begins to brown. Remove the apple and onion from the pan.
- 4Reheat the pan and lightly brown the pork steaks, two at a time, then return them all to the pan.
- 5Add the brandy and stir until it has nearly all evaporated. Add the mustard and stock.
- 6Simmer over low heat, covered, for 15 minutes.
- 7Return the apple to the pan with the prunes and cream and simmer for 10 minutes, or until pork is tender.
- 8Season to taste before serving.
