- 1Heat oil in a pan and cook onions until glassy
- 2Add cumin, tomato paste, salt, pepper and sugar. Stir over medium heat for 5 minutes.
- 3Add chickpeas and spinach. Reduce heat, cover and simmer for 20- 30 minutes, stirring occasionally.
