Directions
- 1Preheat oven to 350 °F (175 °C).
- 2Cream together shortening and sugar.
- 3Add egg replacer (mixed with water following directions on the box). Beat well.
- 4Sift in dry ingredients and combine. Add banana and continue mixing. Stir in chocolate chips.
- 5Divide into 6 parts of a greased muffin pan.
- 6Bake for 30-35 minutes. If using loaf pan you'll need to increase bake time by 10 minutes.
