Banana Bread Muffins with Chocolate Chips

Ingredients

Directions

  1. 1Preheat oven to 350 °F (175 °C).
  2. 2Cream together shortening and sugar.
  3. 3Add egg replacer (mixed with water following directions on the box). Beat well.
  4. 4Sift in dry ingredients and combine. Add banana and continue mixing. Stir in chocolate chips.
  5. 5Divide into 6 parts of a greased muffin pan.
  6. 6Bake for 30-35 minutes. If using loaf pan you'll need to increase bake time by 10 minutes.
