Ingredients
- 1/2 tsp saltNutrition
- 1/4 cup extra virgin olive oilNutrition
- 1/2 cup cashew halves & piecesNutrition
- 1/2 cup hulled roasted unsalted hulled sunflower seedsNutrition
- 1/3 cup sugarNutrition
- 1 small red onionNutrition
- 1/2 cup apple cider vinegarNutrition
- 1 cup shredded carrotsNutrition
- 1/2 cup dried cranberriesNutrition
- 1/2 tsp black pepperNutrition
- 6 tbsps blueberriesNutrition
- 8 oz kaleNutrition
Directions
- 1Chop kale (stems removed).
- 2In a large bowl add kale, onion, carrots, blueberries, dried cranberries, cashews (smashed into bits) and shelled sunflower seeds. Set aside.
- 3Whisk together oil, vinegar, salt, pepper and sugar to make dressing.
- 4Pour dressing onto salad and toss.
- 5Refrigerate for about an hour before serving.
