- 1Preheat oven to 375 °F (190 °C).
- 2Cut cauliflower into small pieces and steam until tender, approximately 5 minutes.
- 3Remove and strain.
- 4Melt cream cheese in a medium saucepan over medium heat. Whisk 1 cup cheddar cheese, pepper, garlic, and salt. Once cheese is melted remove from heat
- 5Transfer cauliflower to a 9x9" baking dish. Pour cheese mixture and toss to coat. Sprinkle remaining cheese and crushed pork rinds on top.
- 6Bake until bubbly, about 20 minutes.
