  1. 1Preheat the oven to a medium-high heat.
  2. 2Cut the yellow pepper in half, and scoop out the seeds.
  3. 3Lay the pepper halfs on their sides, to make two 'dishes'.
  4. 4Chop the remaining ingredients and put them into the yellow pepper 'dishes'.
  5. 5Place the peppers in a baking tray, with a tiny amount of water (to prevent sticking to the pan and drying out).
  6. 6Put the peppers in the oven and bake for about 15-20 minutes or until the peppers are soft and the cheese has melted and gone crispy on top.
