- 1Preheat the oven to a medium-high heat.
- 2Cut the yellow pepper in half, and scoop out the seeds.
- 3Lay the pepper halfs on their sides, to make two 'dishes'.
- 4Chop the remaining ingredients and put them into the yellow pepper 'dishes'.
- 5Place the peppers in a baking tray, with a tiny amount of water (to prevent sticking to the pan and drying out).
- 6Put the peppers in the oven and bake for about 15-20 minutes or until the peppers are soft and the cheese has melted and gone crispy on top.
