Breakfast Frittata

Ingredients
- 1 dash sea saltNutrition
- 1 sprig cilantroNutrition
- 2/3 cup sausage crumblesNutrition
- 1 oz fat free mozzarella cheeseNutrition
- 1/2 cup tomatoes, choppedNutrition
- 1/2 cup egg whitesNutrition
- 1 dash black pepperNutrition
- 1 cup broccoli, choppedNutrition
- 1/2 tsp garlicNutrition
- 1 tbsp red onion, choppedNutrition
Directions
- 1Preheat oven to 350 °F (175 °C). Spray a non-stick black iron skillet.
- 2Saute onions, garlic, broccoli, 1/4 cup of the tomatoes and sausage crumbles on a low heat. Remove from heat.
- 3In a separate bowl mix egg whites, salt and pepper and pour over vegetables in the skillet. Sprinkle cheese and cilantro on top.
- 4Bake 8-10 minutes. Remove from oven and let sit for a minute.
- 5Garnish with mint leaves and remaining tomatoes.
