  1. 1Preheat oven to 350 °F (175 °C). Spray a non-stick black iron skillet.
  2. 2Saute onions, garlic, broccoli, 1/4 cup of the tomatoes and sausage crumbles on a low heat. Remove from heat.
  3. 3In a separate bowl mix egg whites, salt and pepper and pour over vegetables in the skillet. Sprinkle cheese and cilantro on top.
  4. 4Bake 8-10 minutes. Remove from oven and let sit for a minute.
  5. 5Garnish with mint leaves and remaining tomatoes.
