- 2In a bowl, beat the eggs. Add onion, green onion, tomato, salt, pepper, garlic powder, and hot sauce (like Tapatio brand).
- 3Stir in bacon and cheese.
- 4Spoon by 1/3 cupfuls into greased muffin cups.
- 5Bake at 350° F (175° C) for 20-25 minutes or until tops are set and a knife inserted near the center comes out clean.
